Kifli Apricot Filling
Kifli is a traditional Hungarian cookie. It can be filled with either
a fruit or a nut filling. The recipes provided here are for the Dough,
an Apricot Filling, and a Nut Filling.
This apricot filling is essentially a very thick apricot jam (and is
very good that way). Do not use store bought jams as they are too thin
and will run out of the cookie while baking.

| Ingredients: |
| 1 LB Dried Apricots |
2 Cups Sugar |
| |

|
| Preparation: |
- Cover apricots with hot water and soak overnight (use as little
water as possible)
- After soaking, cook uncovered until apricots are soft (stir
frequently)
- When the apricots are very soft they can be mashed against the
side of the pot using a spoon (or puree in a food processor),
puree should be smooth
- Cook until puree is thick (spoon will stand up)
- Add sugar and cook until completely dissolved
